- 12 oz linguine pasta
- 1 lb boneless skinless chicken breast (sliced thin)
- salt (to taste)
- black pepper (to taste)
- 1 tsp garlic powder
- 1 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic (minced)
- 1 cup roasted red pepper (sliced, jarred or homemade)
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese (orange or sharp)
- 1 tbsp fresh parsley (chopped, plus more for garnish)

Directions
- Boil linguine pasta in salted water until al dente. Drain and set aside.
- Season chicken breast slices with salt, black pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute.
- Stir in roasted red peppers and cook for another minute.
- Pour in chicken broth and heavy cream, bringing to a gentle simmer.
- Lower heat and stir in shredded cheddar cheese until smooth and creamy.
- Return chicken to skillet, add cooked linguine, and toss until coated in the sauce.
- Garnish with fresh parsley and serve hot.
