Directions

  1. Pat the CHICKEN WINGS thoroughly dry with paper towels so the coating becomes crisp during frying.
  2. Place the wings in a large bowl and season them with SALT, BLACK PEPPER, ONION POWDER, GARLIC POWDER, and CAYENNE PEPPER.
  3. Sprinkle the wings lightly with CORNSTARCH and toss until each piece is evenly coated. The wings should have a thin coating rather than a heavy breading.
  4. Heat frying oil in a deep skillet or heavy-bottomed pot to approximately 350°F.
  5. Carefully add the wings in batches so the pan is not overcrowded.
  6. Fry the wings for approximately 12 minutes, turning as needed, until deeply golden, crisp, and cooked through. Chicken should reach an internal temperature of 165°F.
  7. Transfer the fried wings to a wire rack or paper towel-lined tray and allow the excess oil to drain.
  8. To make the cowboy butter, melt the UNSALTED BUTTER in a large skillet over medium-low heat.
  9. Add the MINCED GARLIC, RED CHILI FLAKES, and DIJON MUSTARD. Stir until evenly combined and fragrant.
  10. Stir in the chopped PARSLEY, chopped CILANTRO, and ADOBO SEASONING.
  11. Squeeze in the juice from half a LEMON and stir well.
  12. Allow the cowboy butter to simmer gently for 2–3 minutes, stirring frequently, until the garlic is fragrant and the flavors are combined. Do not let the butter brown or burn.
  13. Add the fried wings directly to the skillet with the cowboy butter.
  14. Toss the wings until each piece is thoroughly coated with the buttery garlic, herbs, chili flakes, and seasonings.
  15. Serve immediately while the wings are hot, crisp, and glossy with cowboy butter.
