Recipe 1 of 5 · The Centerpiece

Garlic & Herb Roasted Turkey Breast

A juicy, herb-crusted turkey breast with lemon, garlic, and fresh thyme. Remove the skin before serving for the lighter option — the flavor goes all the way through.

Sliced garlic and herb roasted turkey breast with pan sauce

Servings: 6 · Prep: 20 min · Roast: 75–100 min · Rest: 15 min

Ingredients

  • 2½ lb boneless, skin-on turkey breast roast, preferably tied
  • 1 tbsp extra-virgin olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • ¾ tsp kosher salt, or to taste
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ cup low-sodium chicken broth
  • 1 lemon, sliced
  • 1 small onion, quartered

Instructions

  1. Preheat the oven to 350°F. Pat the turkey breast completely dry with paper towels so the herb rub can cling and the skin can brown.
  2. In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, lemon zest, lemon juice, salt, pepper, and paprika into a thick, fragrant paste.
  3. Rub the herb mixture generously all over the turkey, working some of it under the skin wherever you can gently loosen it without tearing.
  4. Arrange the quartered onion and lemon slices in the bottom of a roasting dish, set the turkey on top skin-side up, and pour the broth around it.
  5. Roast for 75–100 minutes, checking early with a food thermometer and tenting loosely with foil if the skin is browning too fast.
  6. Remove when the thickest part of the breast reaches 165°F, then rest for 15 minutes. Remove the skin for the lighter serving, slice into six portions, and spoon a little pan juice over each.

Make-ahead: Season the turkey the night before, cover, and refrigerate. Let it sit at room temperature for 20 minutes before roasting.

Recipe 2 of 5 · The Comfort Classic

Creamy Garlic Mashed Potatoes

A creamy classic made with nonfat Greek yogurt, warm low-fat milk, and just a small amount of butter. Still rich, still fluffy, still the first bowl to empty.

Creamy garlic mashed potatoes topped with chives in a large bowl

Servings: 6 · Prep: 10 min · Cook: 25 min

Ingredients

  • 2 lb Yukon Gold potatoes, peeled and cubed
  • 4 garlic cloves, peeled
  • ½ cup plain nonfat Greek yogurt
  • ⅓ cup 1% milk, warmed
  • 1 tbsp unsalted butter
  • ½ tsp kosher salt, or to taste
  • ¼ tsp black pepper
  • 2 tbsp fresh chives, finely chopped

Instructions

  1. Place the cubed potatoes and peeled garlic cloves in a large saucepan and cover with cold water by 1 inch.
  2. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes, until the potatoes fall apart easily when pierced with a fork.
  3. Drain well and return the potatoes and garlic to the warm pot for 1 minute to steam off excess moisture.
  4. Mash the potatoes and garlic until smooth, then stir in the warm milk and butter until fully absorbed.
  5. Let the mixture cool for a minute, then fold in the Greek yogurt and season with salt and pepper. Loosen with a splash more milk if it looks stiff.
  6. Garnish with fresh chives and serve warm.

Make-ahead: Peel and cube the potatoes up to 24 hours ahead. Refrigerate them submerged in cold water, then drain before cooking.

Recipe 3 of 5 · The Color on the Table

Maple-Balsamic Brussels Sprouts & Carrots

Colorful roasted vegetables with a modest amount of maple syrup and a bright balsamic finish. Caramelized edges, tender centers, and plenty of flavor.

Maple-balsamic roasted Brussels sprouts and carrots arranged on a baking sheet

Servings: 6 · Prep: 10 min · Roast: 25–30 min

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 lb carrots, peeled and cut into ½-inch diagonal pieces
  • 1½ tbsp extra-virgin olive oil
  • 1 tbsp pure maple syrup
  • 1½ tbsp balsamic vinegar, divided
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tsp fresh thyme leaves, optional

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the Brussels sprouts and carrots with the olive oil, maple syrup, 1 tablespoon of the balsamic vinegar, garlic powder, salt, and pepper until evenly coated.
  3. Spread everything in a single layer on the baking sheet, placing the sprouts cut-side down so they caramelize against the hot pan.
  4. Roast for 20 minutes, then stir the carrots and check the sprouts for browning.
  5. Roast for another 5–10 minutes, until the carrots are tender and the sprouts are deeply browned at the edges.
  6. Transfer to a serving dish and finish with the remaining ½ tablespoon of balsamic vinegar and the optional fresh thyme.

Make-ahead: Wash and cut the vegetables the day before. Refrigerate them dry and season just before roasting.

Recipe 4 of 5 · The Bright Spot

Cranberry Orange Sauce

Tart cranberries, fresh orange, and a modest amount of honey. One saucepan, fifteen minutes, and a sauce that tastes nothing like the can.

Cranberry orange sauce in a serving dish

Servings: 6 · Prep: 5 min · Cook: 15 min · Cool: Before serving

Ingredients

  • 12 oz fresh or frozen cranberries
  • ½ cup fresh orange juice
  • ½ cup water
  • 3 tbsp honey
  • 1 tsp finely grated orange zest
  • ¼ tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Rinse the cranberries under cold water and discard any soft or damaged berries.
  2. Combine the cranberries, orange juice, water, honey, orange zest, cinnamon, and salt in a medium saucepan.
  3. Bring to a gentle boil over medium heat, then reduce to a simmer and cook for 10–15 minutes, stirring occasionally.
  4. Continue until the berries have burst and the liquid has thickened enough to coat the back of a spoon.
  5. Taste and adjust the sweetness if needed — note that any extra honey will change the nutrition.
  6. Cool until the sauce thickens further, then serve chilled or at room temperature.

Make-ahead: Make up to three days ahead. Refrigerate covered and bring to room temperature before serving.

Recipe 5 of 5 · The Sweet Finish

Warm Cinnamon Apples with Pecan-Oat Crumble

A warm, fruit-forward holiday dessert with a crunchy oat-and-pecan topping. The apples do most of the work; the crumble does the rest.

Warm cinnamon apples with pecan-oat crumble on a plate

Servings: 6 · Prep: 15 min · Bake: 25–30 min

Ingredients — Filling

  • 4 medium apples (about 1½ lb), cored and diced
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp pure maple syrup
  • 1 tsp cornstarch

Ingredients — Topping

  • ½ cup old-fashioned rolled oats
  • ¼ cup chopped pecans
  • 2 tbsp whole-wheat flour
  • 1 tbsp pure maple syrup
  • 1 tbsp unsalted butter, melted
  • ½ tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F and lightly grease an 8-inch square baking dish or six oven-safe ramekins.
  2. In a large bowl, toss the diced apples with the lemon juice, cinnamon, nutmeg, maple syrup, and cornstarch until evenly coated, then spread the mixture in the baking dish.
  3. In a separate bowl, combine the oats, chopped pecans, whole-wheat flour, maple syrup, melted butter, cinnamon, and salt until the mixture looks like coarse, clumpy crumbs.
  4. Sprinkle the crumble evenly over the apples in a single layer, covering as much of the fruit as possible.
  5. Bake for 25–30 minutes, until the apples are tender and the topping is golden. Tent with foil if the topping browns too quickly.
  6. Rest for 5–10 minutes before portioning into six servings.

Make-ahead: Prepare the dry topping the day before and keep it separate, tightly covered, until baking.

Thanksgiving Prep & Cooking Schedule

Work backwards from dinner time and the day stays calm.

  1. 1–3 days ahead: Make the cranberry sauce and refrigerate it covered.
  2. Day before: Season the turkey, wash and trim the vegetables, prep the dry crumble topping, and chop all herbs.
  3. 2½–3 hours before dinner: Begin roasting the turkey, adjusting the start time to the roast size and your thermometer readings.
  4. During roasting: Prep the potatoes and vegetables, and plan the oven order.
  5. After the turkey reaches 165°F: Rest it for 15 minutes, raise the oven to 425°F, and roast the Brussels sprouts and carrots.
  6. Near service: Mash the potatoes, slice the turkey, plate the sides, and serve the cranberry sauce.
  7. Dessert: Bake the crumble separately at 375°F — ideally after dinner if you’re working with a single oven.

A note on timing: this menu uses three oven temperatures (350°F, 425°F, and 375°F), so sequencing matters. The full menu is not designed to finish within two hours in a single oven.

Allergy Notes

This collection contains dairy (Greek yogurt, milk, butter), tree nuts (pecans), and wheat/gluten (whole-wheat flour, oats). Always check individual ingredient labels for additional allergens, and confirm that your oats are certified gluten-free if needed.

Calorie and nutrition figures for this collection are preliminary estimates and are being recalculated from finalized, kitchen-tested recipes and ingredient yields. Turkey timing varies by roast shape and oven. Always cook poultry to an internal temperature of 165°F.
