This Cheesy Taco Rice combines lean ground beef, rice, black beans, colorful vegetables, melty cheese, and a creamy taco sauce into a protein-packed one-pan dinner that’s perfect for meal prep.

Directions

  1. Add all of the Creamy Taco Bell Sauce ingredients to a blender and blend until completely smooth.
  2. Add the lean ground beef to a large pan over medium-high heat. Flatten the beef and cook for 3–4 minutes until a crust forms.
  3. Flip the beef and cook for another 2–3 minutes.
  4. Break the beef into small pieces and add the corn, bell peppers, and onion. Cook until softened and lightly browned.
  5. Add the taco seasoning, chili powder, cumin, salt, and Worcestershire sauce. Cook for 30–60 seconds until fragrant.
  6. Add the black beans and cook for 1 minute.
  7. Add the beef bone broth, diced tomatoes with green chiles, tomato sauce, and rinsed rice. Stir and bring to a boil.
  8. Cover, reduce heat, and cook for 15–20 minutes, stirring once halfway through.
  9. Remove the lid and continue cooking until the rice is tender and excess liquid has evaporated.
  10. Turn off the heat, add the Colby Jack cheese, cover, and allow it to melt.
  11. Serve topped with jalapeños, light sour cream, low-cal taco sauce, cilantro, and the creamy taco sauce.
