This Cheesy Taco Rice combines lean ground beef, rice, black beans, colorful vegetables, melty cheese, and a creamy taco sauce into a protein-packed one-pan dinner that’s perfect for meal prep.
Ingredients:
- 16 oz 96/4 lean ground beef
- 150 g frozen corn
- 120 g orange bell pepper (diced)
- 120 g yellow bell pepper (diced)
- 120 g green bell pepper (diced)
- 150 g white onion (diced)
- 240 g canned black beans (drained and rinsed)
- 25 g taco seasoning
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1 pinch salt
- 5 g Worcestershire sauce
- 10 oz canned diced tomatoes with green chiles (Rotel)
- 227 g tomato sauce (8 oz can)
- 240 g beef bone broth
- 185 g long grain white rice (uncooked, rinsed)
- 85 g 2% colby jack cheese
For the Creamy Taco Bell Sauce
- 170 g plain non fat Greek yogurt
- 113 g 2% cottage cheese
- 113 g taco bell fire sauce
- 8 g taco seasoning
Toppings
- 20 g jalapenos (sliced)
- 48 g light sour cream
- 60 g low cal taco bell sauce
- fresh cilantro

Directions
- Add all of the Creamy Taco Bell Sauce ingredients to a blender and blend until completely smooth.
- Add the lean ground beef to a large pan over medium-high heat. Flatten the beef and cook for 3–4 minutes until a crust forms.
- Flip the beef and cook for another 2–3 minutes.
- Break the beef into small pieces and add the corn, bell peppers, and onion. Cook until softened and lightly browned.
- Add the taco seasoning, chili powder, cumin, salt, and Worcestershire sauce. Cook for 30–60 seconds until fragrant.
- Add the black beans and cook for 1 minute.
- Add the beef bone broth, diced tomatoes with green chiles, tomato sauce, and rinsed rice. Stir and bring to a boil.
- Cover, reduce heat, and cook for 15–20 minutes, stirring once halfway through.
- Remove the lid and continue cooking until the rice is tender and excess liquid has evaporated.
- Turn off the heat, add the Colby Jack cheese, cover, and allow it to melt.
- Serve topped with jalapeños, light sour cream, low-cal taco sauce, cilantro, and the creamy taco sauce.
