Ingredients:
- 1 medium head of cauliflower (cut into small florets)
- 1 cup fat free evaporated milk
- 2 oz low fat cream cheese
- 1 1/2 tsp chicken stock powder
- 2/3 cup shredded light cheddar cheese
Directions
- Steam or roast the cauliflower until tender.
- In a sauce pan pour evaporated milk and add cream cheese. Melt until mostly smooth.
- Mix in chicken stock powder.
- Stir in shredded cheese until smooth, then toss with cauliflower.
- (optional) top with parmesan.
