Ingredients:
- 1 - 2 medium zucchinis (sliced into 1/4 inch rounds)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 pinch salt
- 1 pinch pepper
- 1/3 mozzarella cheese
- 1/2 cup pepperoni or chopped veggies
Directions
- Preheat oven to 400°F (200°C) and lightly grease a small baking dish or round pie pan.
- Prep the zucchini base: Toss the zucchini rounds with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Layer in the pan: Overlap the zucchini rounds tightly in the bottom of the pan to create a solid base.
