Directions

  1. Preheat oven to 400°F (200°C) and lightly grease a small baking dish or round pie pan.
  2. Prep the zucchini base: Toss the zucchini rounds with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Layer in the pan: Overlap the zucchini rounds tightly in the bottom of the pan to create a solid base.
  4. Add sauce: Spoon a thin layer of pizza sauce over the zucchini base. Don’t go too heavy to keep things from getting watery.
  5. Top it off: Sprinkle with mozzarella, pepperoni (or veggie toppings), and a touch more seasoning if you like.
  6. Bake for 15–20 minutes, until the cheese is bubbly and the zucchini is tender but not mushy.
  7. Cool slightly, then use a spatula to pull apart pieces — just like pizza bites!

💡Tips for pre-diabetic swaps

  • Use low-fat cheese and lean proteins like ground turkey or veggie crumbles.

  • Make your own sauce with canned tomatoes, garlic, and herbs to cut down on hidden sugars.

  • Add flaxseed meal or nutritional yeast for a fiber and flavor boost.
