Blue Raspberry Gatorade-Inspired Drink

A show-stopping layered electrolyte drink with a vibrant blue top and tangy raspberry-pink bottom! This naturally colored beauty uses blue spirulina for that electric blue hue without any artificial dyes. It’s as fun to look at as it is delicious and hydrating.
Ingredients:
Lemon Raspberry Layer
- 1 1/2 cups coconut water
- 1 lemon (peeled)
- 1 cup raspberries (fresh or frozen)
- 1/4 - 1/2 tsp salt
- 2 tbsp honey (or maple syrup)
- 1/4 - 1/2 tsp citric acid (for extra tartness)
Blue Layer
- 1 cup coconut water (or filtered water or decaf green tea)
- 1/2 tsp blue spirulina powder
- 1 tbsp honey
- 1 tbsp water (warm, to dissolve honey)
- ice
- lemon wedge (for garnish)
- raspberries (fresh, for garnish)

Directions
- Make the Lemon Raspberry Layer: In a blender, combine 1½ cups coconut water, 1 lemon (peeled), 1 cup raspberries, ¼–½ teaspoon salt, 2 tablespoons honey or maple syrup, and optional ¼–½ teaspoon citric acid for extra tartness. Blend until smooth, then strain through a fine mesh sieve to remove raspberry seeds. Pour into two glasses over ice.
- Make the Blue Layer: In a small bowl, whisk together 1 cup coconut water (or filtered water/decaf green tea), ½ teaspoon blue spirulina, and 1 tablespoon honey dissolved in 1 tablespoon warm water. Whisk until the spirulina is fully dissolved and the mixture is a vibrant, opaque blue.
- Assemble: Gently float the blue layer on top of the lemon raspberry layer using the back of a spoon to create a stunning two-toned effect—electric blue on top, vibrant pink below.
- Stir before drinking or serve as-is to show off the beautiful layers.
- Garnish with a lemon wedge and fresh raspberries. Enjoy!
