Directions

  1. In a large container or bowl, combine the LA Fish Fry, flour, and Old Bay seasoning for the dredging mixture.
  2. Place 2 catfish and 2 tilapia filets in a separate bowl. Season them generously with Old Bay and Nature’s Seasoning.
  3. Add 2 eggs and a generous splash of hot sauce to the bowl with the fish. Use your hands to mix until the filets are evenly coated.
  4. Dredge each egg-coated filet in the prepared flour mixture, pressing gently to ensure a good coating.
  5. Chop 1 jalapeño and 1 onion.
  6. Add oil to a deep skillet or pan and heat over medium-high heat.
  7. Once the oil is hot, add the 6 garlic cloves (and optional rosemary and thyme if using) to season the oil. Fry until fragrant and lightly browned, then remove and set aside.
  8. Add the chopped jalapeño and onion to the hot oil. Fry until they begin to soften and get crispy edges, then remove and set aside with the garlic.
  9. Carefully add the coated fish filets to the hot oil. Return the fried garlic, jalapeño, and onion to the pan around the fish. Fry until the filets are golden brown and cooked through, flipping once.
  10. Place the cooked fish on a plate, topped with the fried vegetables. Add extra hot sauce to your liking and enjoy immediately.
