Instructions

1

Prep all produce: Thoroughly wash all fruits and vegetables. Peel 2 beets and chop into chunks that will fit through your juicer feed tube. Peel 2 carrots. Peel 1 lemon and 1 orange (removing as much white pith as possible). Core and slice 1 apple. Peel a thumb-sized piece of ginger.

2

Juice in order: Turn on your juicer. Start by juicing the ginger, followed by the carrots and beets (their firm texture helps push through the juicer). Follow with the apple, then finish with the citrus fruits (lemon and orange).

3

Stir and taste: Pour the juice into a glass or pitcher. Stir well to combine all the layers of flavor. Taste and adjust if needed – if too earthy, you can add a bit more apple or orange juice next time.

4

Serve immediately: For best flavor and nutrient retention, drink the juice right away. If storing, pour into an airtight container, filling to the top to minimize oxidation, and refrigerate for up to 24 hours. Shake before drinking.

A vibrant, nutrient-dense juice that energizes naturally without added sugars.

This EBT-friendly beet juice is a powerhouse of nutrients: beets support circulation and stamina, carrots provide vitamin A for eye health, citrus offers vitamin C, apples add natural sweetness and fiber, while ginger adds anti-inflammatory benefits and a warming kick. It’s a delicious way to consume a rainbow of produce in one glass.
