A perfect high-protein snack or healthy dessert! These easy jars feature a creamy, sweet strawberry-cheese blend layered with fresh fruit, creating a satisfying treat that tastes indulgent but is packed with nutrition.
Ingredients:
- 3 servings cottage cheese
- 1 cup 0% Greek yogurt
- 6-8 medium strawberries
- 2-3 tbsp monk fruit sweetener (powdered (or preferred sweetener))
- 1 splash vanilla extract

Directions
- In a food processor, combine the cottage cheese, Greek yogurt, 6-8 quartered strawberries, powdered monk fruit sweetener, and a splash of vanilla extract.
- Blend on high until the mixture is completely smooth and creamy. Stop to scrape down the sides if needed. Taste and adjust sweetness or vanilla if desired.
- Wash and finely dice another 6-8 strawberries for layering.
- Prepare 4 small jars or glass containers (about 8 oz each). Begin assembly by adding a spoonful of the diced strawberries to the bottom of each jar.
- Top the strawberries with a couple of spoonfuls of the creamy cheese and yogurt mixture. Repeat the layers 1-2 more times, ending with the creamy mixture on top.
- For an optional garnish, top each jar with a drizzle of melted sugar-free chocolate chips and a sprinkle of chopped pistachios.
- Seal the jars with lids and refrigerate for at least 1 hour, or until well chilled.
- Enjoy cold directly from the jar!
