A perfect high-protein snack or healthy dessert! These easy jars feature a creamy, sweet strawberry-cheese blend layered with fresh fruit, creating a satisfying treat that tastes indulgent but is packed with nutrition.

Directions

  1. In a food processor, combine the cottage cheese, Greek yogurt, 6-8 quartered strawberries, powdered monk fruit sweetener, and a splash of vanilla extract.
  2. Blend on high until the mixture is completely smooth and creamy. Stop to scrape down the sides if needed. Taste and adjust sweetness or vanilla if desired.
  3. Wash and finely dice another 6-8 strawberries for layering.
  4. Prepare 4 small jars or glass containers (about 8 oz each). Begin assembly by adding a spoonful of the diced strawberries to the bottom of each jar.
  5. Top the strawberries with a couple of spoonfuls of the creamy cheese and yogurt mixture. Repeat the layers 1-2 more times, ending with the creamy mixture on top.
  6. For an optional garnish, top each jar with a drizzle of melted sugar-free chocolate chips and a sprinkle of chopped pistachios.
  7. Seal the jars with lids and refrigerate for at least 1 hour, or until well chilled.
  8. Enjoy cold directly from the jar!
