Incredibly simple, healthy, and delicious blueberry muffins made with just five wholesome ingredients. They’re naturally sweetened, packed with protein, and ready in 20 minutes—perfect for a quick breakfast or snack!

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with oil or non-stick spray, or line with paper muffin cups.
  2. In a large mixing bowl, add all the ingredients: 2 ripe bananas, 2 eggs, 1 cup frozen blueberries (no need to thaw), ½ cup peanut butter, and 1 cup cottage cheese.
  3. Stir everything together vigorously with a spoon or spatula until well combined. The bananas should be mashed and all ingredients evenly distributed. Don’t worry about breaking up the blueberries slightly as you mix.
  4. Scoop the muffin mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake for 25 minutes, or until the tops are set and a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely, or enjoy them warm!
