20 Minute Blueberry Muffins

Incredibly simple, healthy, and delicious blueberry muffins made with just five wholesome ingredients. They’re naturally sweetened, packed with protein, and ready in 20 minutes—perfect for a quick breakfast or snack!
Ingredients:
- 2 bananas
- 2 eggs
- 1 cup frozen blueberries
- 1/2 cup peanut butter
- 1 cup cottage cheese

Directions
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with oil or non-stick spray, or line with paper muffin cups.
- In a large mixing bowl, add all the ingredients: 2 ripe bananas, 2 eggs, 1 cup frozen blueberries (no need to thaw), ½ cup peanut butter, and 1 cup cottage cheese.
- Stir everything together vigorously with a spoon or spatula until well combined. The bananas should be mashed and all ingredients evenly distributed. Don’t worry about breaking up the blueberries slightly as you mix.
- Scoop the muffin mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25 minutes, or until the tops are set and a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely, or enjoy them warm!
