The ultimate high-protein lava brownie that’s ready in just 2 minutes! Rich, fudgy, and perfectly gooey in the center, this mug brownie is packed with protein and made with simple ingredients. The perfect single-serve dessert for when those chocolate cravings hit.
Ingredients:
- 1 egg
- 1/3 cup cottage cheese (blended, or Greek yogurt)
- 1-2 tbsp maple syrup (or brown sugar)
- 1 scoop chocolate protein powder
- 3 1/2 tbsp unsweetened cocoa powder
- pinch salt
- chocolate chips (to add on top)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- In a microwave-safe coffee cup or small bowl, combine egg, blended cottage cheese (or Greek yogurt), and maple syrup (or brown sugar). Stir well to combine.
- Add chocolate protein powder, unsweetened cocoa powder, and a pinch of salt. Stir until the brownie batter is well mixed.
- Sprinkle chocolate chips on top.
- Place the mug in the microwave and heat on high power for 90 seconds. The center should still be a bit gooey—just like a lava cake. If not done, microwave in 10-second increments until desired doneness.
- Let the brownie cool for a minute, then enjoy your healthy sweet treat!
