Directions

  1. Make the Raspberry Purée: In a wide-mouth jar, combine ½ cup raspberries (fresh or frozen), 2 teaspoons maple syrup or honey, and a splash of lime juice. Blend using an immersion blender until smooth. Set aside.
  2. Make the White Peach Base: In a high-speed blender, combine 2½ cups coconut water (can substitute filtered water or decaf green tea), juice of ½ lime, 2 white peaches (pitted), ¼–½ teaspoon salt, and 2 tablespoons honey or maple syrup. Blend for 20-30 seconds until completely smooth and the mixture is a **creamy, opaque pale peach** color.
  3. Assemble: Add about ½ cup of the raspberry purée to the bottom of two glasses filled with ice.
  4. Slowly strain the white peach mixture over the raspberry purée to create a beautiful layered effect—the creamy peach will float on top of the vibrant pink raspberry layer.
  5. Stir gently before sipping or serve as-is to show off the stunning layers. Garnish with a lime wedge and enjoy!
