Directions
- Add all ingredients to a blender: 2½ cups coconut water, 1½–2 cups fresh or frozen papaya (peeled and seeded), juice of 1–1½ limes (depending on how strong you like the lime flavor), ¼–½ teaspoon salt, and 2 tablespoons maple syrup.
- Blend on high speed for 20-30 seconds until completely smooth and the mixture is a **thick, opaque vibrant sunset orange-pink** color.
- For a smoother drink, strain through a fine mesh sieve to remove any papaya fibers (optional).
- Pour over two glasses filled with ice.
- Top with a splash of sparkling water or extra coconut water for a refreshing fizz.
- Garnish with a lime wedge and enjoy!
