Directions

  1. Roast the beets: Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast for 45–60 minutes, until tender. Let cool, then peel and slice into wedges or cubes.
  2. Make the whipped feta: In a food processor, combine the vegan yogurt, vegan feta cheese, olive oil, salt, and white pepper. Blend until completely smooth and creamy.
  3. Spread the base: Transfer the whipped feta to a serving plate or shallow bowl, spreading it into an even layer with the back of a spoon.
  4. Top with beets: Arrange the roasted beets on top of the whipped feta.
