Tonight introduces a slightly bigger step: foods that naturally belong together are served on the same plate, but each ingredient remains separate and recognizable.

Many picky eaters become overwhelmed when foods are layered together. Deconstructed nachos remove that pressure by allowing children to decide if—and when—they want ingredients to touch.

The goal tonight isn’t to build fully loaded nachos.

The goal is helping children feel comfortable seeing familiar and unfamiliar foods together while staying in control of their meal.

Step 1: Cook the Taco Meat

Heat a large skillet over medium-high heat.

Add olive oil.

Add the ground beef or turkey.

Break the meat into small crumbles with a spatula.

Cook for 6–8 minutes until browned.

Drain excess grease if needed.

Stir in taco seasoning and water.

Simmer for 2–3 minutes until the seasoning coats the meat.

Transfer to a serving bowl.

Step 2: Melt the Cheese

Spread tortilla chips onto a baking sheet.

Sprinkle shredded cheddar evenly over the chips.

Bake at 375°F for 4–5 minutes, just until the cheese melts.

Remove from the oven.

Step 3: Prepare the Stretch Foods

Place each ingredient into its own bowl:

Avoid:

❌ “That’s not how nachos are supposed to be.”

❌ “You need vegetables.”

❌ “Mix everything together.”

Instead say:

✅ “Tell me about your plate.”

✅ “Which topping looks interesting today?”

✅ “Would you like your food touching or separate?”

Respecting children’s preferences while gently exposing them to new foods helps reduce anxiety around meals.
