The Picky Eater Reset: Crispy Parmesan Chicken with Rainbow Veggie Fries

June 24, 2026

This Recipe is part of our Picky Eater Reset

Why It’s Included

By the end of Week 3, children have practiced making food choices, exploring toppings, and seeing unfamiliar foods alongside familiar favorites.

Tonight introduces a plated meal rather than a build-your-own dinner. While the foods are served together, each component remains separate and recognizable, giving children the option to interact with each item at their own pace.

Chicken is a familiar “safe food,” while colorful vegetable fries become the stretch foods. The colorful presentation encourages curiosity without pressure.

The goal tonight isn’t to finish every vegetable.

The goal is helping children become comfortable sharing a plate with new foods.

Step 1: Preheat the Oven

Preheat oven to 425°F.

Line two baking sheets with parchment paper.

Step 2: Prepare the Fries

Place potatoes, carrots, and zucchini into a large bowl.

Drizzle with a little olive oil.

Season lightly with salt.

Arrange each vegetable in its own section of the baking sheet so they remain separate.

Bake for 25–30 minutes, flipping halfway through.

Add the bell pepper strips during the final 10 minutes of baking.

Step 3: Bread the Chicken

Whisk the egg in one bowl.

In another bowl combine:

  • Panko
  • Parmesan
  • Garlic powder
  • Italian seasoning
  • Salt

Dip each chicken tender into the egg, then coat in the breadcrumb mixture.

Place on the second baking sheet and lightly spray with olive oil.

Bake for 18–20 minutes, or until golden brown and the internal temperature reaches 165°F.

Step 4: Prepare the Dipping Station

Place ketchup, ranch, and honey mustard into small bowls.

Step 5: Plate the Meal

Serve:

  • Crispy Parmesan Chicken
  • Potato fries
  • Carrot fries
  • Zucchini fries
  • Bell pepper strips

Keep each food in its own section of the plate.

Allow children to choose which dipping sauces they’d like to try.
