Strawberry Bread

This tender, moist strawberry bread is bursting with fresh berry flavor in every bite and topped with a dreamy strawberry glaze. The perfect spring bake that freezes beautifully and tastes like sunshine.
Ingredients:
For the Bread
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1/2 cup olive oil (or melted unsalted buter)
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups strawberries (diced, toss with 2 tbsp all-purpose flour)
For the Glaze
- 2 cups powdered sugar
- 2 tbsp melted butter
- 1/3 cup finely diced strawberries
- 1/2 tsp vanilla extract
- 1-2 tbsp heavy cream or milk (as needed to thin (optional))

Directions
- Preheat the oven to 350°F (175°C) and grease a 9″x5″ loaf pan.
- In a medium bowl, stir together the sugar, milk, melted butter or olive oil, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix. The batter will be thick.
- In a small bowl, toss the diced strawberries with the 2 tablespoons of flour until evenly coated. Gently fold the floured strawberries into the batter.
- Pour the batter into the prepared loaf pan and spread evenly. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before glazing.
- Make the glaze: In a small bowl, combine the powdered sugar, melted butter, finely diced strawberries, and vanilla extract. Stir until smooth. If the glaze is too thick, add 1-2 tablespoons of heavy cream or milk to reach your desired consistency.
- Once the bread is completely cool, spread the strawberry glaze evenly over the top. Slice and enjoy!
Store in an airtight container in the refrigerator for up to 3 days.
