Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potato with olive oil, salt, pepper, and a touch of harissa paste. Roast for 20–25 minutes until tender and golden.
  2. Grill or sauté zucchini slices with a splash of olive oil and a pinch of salt until lightly charred.
  3. In a small bowl, toss chickpeas with lemon juice and a teaspoon of harissa paste.
  4. Assemble your bowl: start with quinoa or couscous, then layer in greens, roasted sweet potato, grilled zucchini, and chickpeas.
  5. Drizzle with tahini or extra harissa if desired. Top with fresh parsley, sesame seeds, or a squeeze of lemon for brightness.
