Smokey Harissa Power Bowl
This vibrant and nourishing power bowl is bursting with warm spice, smokey harissa, and fresh toppings. Perfect for meal prep or a flavorful weeknight dinner!

Ingredients:
- 1 cup cooked quinoa or couscous
- 0.5 cup canned chickpeas, drained and rinsed
- 0.5 sweet potato, cubed and roasted
- 0.5 zucchini, sliced and grilled
- Handful of baby spinach or arugula
- 1 tbsp harissa paste (adjust to taste)
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (200°C). Toss cubed sweet potato with olive oil, salt, pepper, and a touch of harissa paste. Roast for 20–25 minutes until tender and golden.
- Grill or sauté zucchini slices with a splash of olive oil and a pinch of salt until lightly charred.
- In a small bowl, toss chickpeas with lemon juice and a teaspoon of harissa paste.
- Assemble your bowl: start with quinoa or couscous, then layer in greens, roasted sweet potato, grilled zucchini, and chickpeas.
- Drizzle with tahini or extra harissa if desired. Top with fresh parsley, sesame seeds, or a squeeze of lemon for brightness.
Make it your own: swap in grilled chicken, roasted cauliflower, or avocado slices for even more options!
