Raw Carrot Ribbon Salad

This raw carrot ribbon salad is fresh, bright, and bursting with crunch. Tossed with a simple citrusy vinaigrette and fresh herbs, it’s a refreshing side dish you can throw together in minutes. Beautiful, healthy, and surprisingly satisfying.
Ingredients:

- 4 large carrots, peeled into ribbons
- 2 tbsp olive oil
- 1 tbsp lemon juice (or apple cider vinegar)
- 1 tsp honey or maple syrup
- Salt and pepper, to taste
- 2 tbsp chopped parsley or cilantro
- Optional: chopped pistachios or sunflower seeds for crunch
Directions

Use a vegetable peeler to shave the carrots into long, thin ribbons. Place them in a large bowl.

In a small jar or bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

Pour the dressing over the carrot ribbons and toss gently to coat.

Sprinkle with herbs and optional nuts or seeds before serving. Serve immediately or chill briefly for a crispier bite.
