🔪 Directions

  1. Make the Corn & Black Bean Salsa

    • Roast corn (removed from cob) over high heat for 3–5 minutes, stirring frequently. Let cool.

    • Prepare remaining salsa ingredients, combine in a bowl, and refrigerate.

  2. Prepare the Creamy Cilantro Lime Sauce

    • Blend all sauce ingredients until smooth. Refrigerate.

  3. Cook the Shrimp

    • Ensure shrimp are cleaned and shells removed.

    • Toss with olive oil and taco seasoning in a bowl until evenly coated.

    • Sauté in a greased skillet over medium-high heat, 2–3 minutes per side. Don’t overcook!

  4. Assemble Your Bowl

    • Layer with Jasmine rice, corn & black bean salsa, shrimp, and a drizzle of creamy cilantro lime sauce.
