Directions

  1. Preheat oven to 400°F (200°C).
  2. Season salmon with salt and pepper. Drizzle with 1 tbsp olive oil.
  3. Bake salmon for 12-15 minutes, or until cooked through.
  4. While salmon bakes, whisk together dressing ingredients.
  5. In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, and olives.
  6. Flake baked salmon into bite-sized pieces.
  7. Add salmon and feta cheese to the salad.
  8. Drizzle with dressing and toss gently.
  9. Serve immediately with lemon wedges.
