This Mediterranean-inspired breakfast plate combines healthy fats, lean protein, fiber, and fresh produce for a satisfying meal that will keep you energized for hours. It’s an easy way to create a balanced breakfast using simple, wholesome ingredients.
Ingredients:
- 2 slices sourdough bread
- 1/2 avocado
- 2 slices uncured turkey
- 2 hard boiled eggs
- 1/2 cup cherry tomatoes
- 6 vermouth olives
For the Lemon Parsley Chickpeas
- 1/2 cup chickpeas
- 1 tbsp fresh parsley (chopped)
- 1 tbsp extra virgin oliveoil
- 1/2 lemon (juiced)
- salt (to taste)
- black pepper (to taste)

Directions
- In a small bowl, combine the chickpeas, parsley, olive oil, lemon juice, salt, and black pepper. Toss until evenly coated and set aside.
- Toast the sourdough bread until golden brown.
- Mash the avocado and spread evenly over the toast.
- Top the toast with the uncured turkey.
- Arrange the hard boiled eggs, cherry tomatoes, vermouth olives, and lemon parsley chickpeas on the plate.
- Serve immediately and enjoy.
