Lemon Grilled Chicken

This recipe is everything a weeknight dinner should be. It’s simple, healthy, and perfect for salads, wraps, or serving straight off the grill.

Directions

STEP 1: MARINATED
  1. Combine the marinade ingredients in a bowl or large Ziploc bag and fully coat the chicken.

  2. Allow to marinate in the refrigerator for 8-12 hours, or at least 30 minutes.

STEP 2: COOK
  1. Grill the chicken over medium heat for 12-15 minutes, flipping occasionally. Alternatively, the chicken can be cooked at 400°F in the air fryer for 25 minutes or the oven for about 30 minutes with a flip halfway through.

  2. The chicken is done when the internal temperature reaches 170°F.

STEP 3: SAUCE
  1. When the chicken is finished cooking, preheat a skillet or saucepan over medium heat.

  2. Sauté the garlic with olive oil just until it starts to brown and get fragrant, then reduce heat to low.

  3. Quickly add in the lemon juice and butter so the garlic doesn’t burn.

  4. Then add the black pepper, honey, and salt to taste.

  5. Simmer on low for a few minutes until it begins to thicken, then add in half of the lemon zest and coat the chicken in the sauce.

  6. Top the chicken with the remaining lemon zest and green onions and serve.
