A bright, zesty, and creamy Greek yogurt bowl topped with a sweet homemade blueberry chia compote, crunchy hemp seeds, and a drizzle of almond butter. Packed with protein and fresh flavor, it’s the perfect way to start your day!
Ingredients:
- 150 g blueberries (fresh or frozen)
- 2 tsp maple syrup
- 1-2 tsp chia seeds
- 200 g Fage 2% Greek yogurt
- 1/2 lemon (juiced and zested (plus extra zest to finish))
- 1 tsp vanilla extract
- 1 tbsp hemp seeds
- 1 tbsp almond butter

Directions
- Make the berry compote: In a small pan, combine 150g blueberries (fresh or frozen) and 1 tsp maple syrup. Cook over medium heat for 3-4 minutes until the berries break down into a compote. Stir in 1-2 tsp chia seeds and cook for another 1-2 minutes until slightly thickened. Remove from heat and let cool.
- Make the lemon yogurt: In a bowl, mix together 200g Greek yogurt, juice and zest of half a lemon, 1 tsp vanilla extract, and 1 tsp maple syrup or honey until smooth and creamy.
- Assemble the bowl: Spoon the lemon yogurt into a serving bowl. Swirl the cooled blueberry compote over the top.
- Finish and serve: Sprinkle with 1 tbsp hemp seeds, drizzle with 1 tbsp almond butter, and grate on some extra lemon zest. Enjoy immediately!
