If you’re looking for a dessert that feels indulgent but works with your fitness goals, this high-protein pistachio cheesecake might be your new favorite. Creamy, rich, and full of flavor, it’s baked to perfection and chilled for the ultimate texture.

- Blend all ingredients in a blender until completely smooth.
- Pour the batter into a parchment-lined 6” round baking dish.
- Bake at 325°F for 40–45 minutes. The edges should be set and the center slightly jiggly.
- Let cool to room temperature, then chill in the fridge for at least 8 hours (overnight preferred).
