Ingredients:
- 1 head of cabbage
- 2.5 cups shredded rotisserie chicken
- 2.5 cup of your favorite mixed greens
- 0.5 cup shredded carrots
- 3 scallions sliced thin
- 2 tbsp avocado oil
Instructions
- Steam the cabbage leaves: Gently peel off 8–10 whole cabbage leaves and steam them for 2–3 minutes until flexible. Set aside to cool.
- Mix the filling: In a large bowl, combine shredded chicken, mixed greens, carrots, and scallions. Drizzle with avocado oil and toss well.
- Assemble: Lay out a steamed cabbage leaf, place a generous scoop of filling in the center, and roll it up like a burrito. Repeat with remaining leaves and filling.
- Serve: Enjoy immediately or store in the fridge for up to 3 days. Perfect for quick lunches or a fresh post-workout bite!
