  1. Step 1: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Step 2: Toss chicken with salt, smoked paprika, onion powder, and garlic powder until well coated.
  3. Step 3: In a bowl, mix flour, potato starch, and seasonings. Add sparkling water to form a smooth batter.
  4. Step 4: Dip each chicken strip into batter, let excess drip off, and place on lined baking sheet.
  5. Step 5: Spray with oil and bake 20–25 minutes, flipping halfway, until golden and cooked through.
