Wash and prepare: Thoroughly wash 1 small beetroot and 4-5 okra pods. Peel the beetroot and slice into thin rounds. Trim the okra ends and slice each pod into ½-inch pieces. No need to peel okra.

Combine in jar: Place the sliced beetroot and okra in a clean 1-quart glass jar or pitcher. If using lemon, add 2-3 thin slices. Optional: add a few mint leaves for freshness.

Add water and infuse: Pour 4 cups of filtered or tap water over the vegetables. Cover the jar and refrigerate for at least 8 hours, or overnight. The longer it infuses, the more vibrant the color and nutrients.

Strain and enjoy: Strain the water into a glass, discarding the vegetables (or composting them). Drink 1-2 glasses daily. The infusion keeps refrigerated for up to 3 days. Refill with water for a second, milder infusion if desired.
