A familiar favorite becomes an easy school lunch with this Egg Salad Classic Lunch Box. A simple homemade egg salad sandwich is paired with crisp apple slices, baby carrots, creamy Greek yogurt, and a small sweet treat for an approachable lunch that is easy to prep ahead and pack on busy school mornings.

Ingredients:
- 1 large egg (hard-boiled, peeled and chopped)
- 1 tbsp mayonnaise
- 1/4 tsp yellow mustarrd
- pinch salt
- pinch black pepper
- 2 sliced sandwich bread
- 1/2 small apple (sliced)
- 1/3 cup baby carrots
- 1/4 cyo Greek yogurt
- 1 small cookie (or other sweet treat)

Directions
- Add the chopped hard-boiled egg, mayonnaise, yellow mustard, and a small pinch of salt and black pepper to a bowl. Gently mix until combined, leaving some texture in the egg.
- Spread the egg salad evenly over one slice of sandwich bread and top with the second slice. Avoid overfilling the sandwich so it stays easy to pack and eat.
- Cut the sandwich straight down the center into two rectangular halves and place them in one compartment of the lunch box.
- Add the apple slices and baby carrots to separate compartments.
- Spoon the Greek yogurt into a small leak-resistant container or compartment.
- Add a small cookie or sweet treat to finish the lunch.
- Seal the lunch box and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.
