Directions

  1. Add the chopped hard-boiled egg, mayonnaise, yellow mustard, and a small pinch of salt and black pepper to a bowl. Gently mix until combined, leaving some texture in the egg.
  2. Spread the egg salad evenly over one slice of sandwich bread and top with the second slice. Avoid overfilling the sandwich so it stays easy to pack and eat.
  3. Cut the sandwich straight down the center into two rectangular halves and place them in one compartment of the lunch box.
  4. Add the apple slices and baby carrots to separate compartments.
  5. Spoon the Greek yogurt into a small leak-resistant container or compartment.
