Ingredients:
- tortillas (enough to line a 9x13 dish, plus a few for the top)
- 1 10 oz can diced tomatoes with green chiles (or salsa, drained)
- 1 15 oz can nacho cheese
- tortilla chips (generous layer)
- 1 15 oz can chili (with or without beans)
- 1 15 oz can refried beans
- cooking oil spray (or oil for brushing)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Line the bottom and sides of the greased dish with tortillas, overlapping as needed to fully cover the surface.
- Spread 1 can drained diced tomatoes with green chiles (or salsa) evenly over the tortilla layer.
- Spread 1 can nacho cheese over the tomatoes.
- Add a layer of tortilla chips on top of the cheese, pressing them down slightly.
- Spoon 1 can chili over the chips, followed by 1 can refried beans, spreading both evenly.
- Top with a few more tortillas. Fold the overhanging edges of the bottom tortillas inward over the top, like folding a large burrito, to seal the filling inside.
- Brush or spray the top tortillas with oil to help them crisp up in the oven.
- Bake for 30 minutes, or until the top is golden brown and crispy.
- Let the casserole rest for a few minutes before slicing. Serve warm and enjoy!
