Crispy, juicy, and packed with bold Creole flavors—this garlic chicken is served over spaghetti in a creamy, cheesy sauce. Seasoned with a blend of Cajun and Creole spices, pan-seared until crispy, then finished in the oven and tossed in a rich garlic Parmesan cream sauce. Pure comfort on a plate.

Directions

  1. Pat 3 chicken thighs completely dry with paper towels.
  2. Season generously on both sides with salt, pepper, paprika, garlic powder, Creole seasoning, and Old Bay seasoning. Rub the seasonings into the chicken.
  3. Heat oil in a large skillet over medium-high heat. Place the chicken skin-side down and cook until crispy and golden brown, about 5 minutes. Flip and cook for another 5 minutes.
  4. While the chicken cooks, bring a pot of salted water to a boil. Add spaghetti noodles and cook until al dente. Drain and set aside.
  5. Transfer the seared chicken to a baking sheet or oven-safe tray. Finish cooking in a preheated oven at 350°F (175°C) for 10-15 minutes, until the internal temperature reaches 165°F (74°C).
  6. In the same skillet used for the chicken (leave the drippings), add diced onion and sauté until softened.
  7. Add a whole head of diced garlic and cook until lightly translucent and fragrant.
  8. Pour in 1 cup chicken broth (or water mixed with chicken bouillon), scraping up any browned bits from the bottom of the pan.
  9. Add heavy whipping cream and stir to combine. Simmer for 2-3 minutes until slightly thickened.
  10. Stir in ¼ cup Parmesan cheese and fresh parsley.
  11. Add the cooked chicken back to the pan and baste with the sauce for about 5 minutes.
  12. To serve, plate the spaghetti noodles, spoon some of the creamy garlic sauce over the top, and place a chicken thigh on top. Drizzle with additional sauce. Garnish with more parsley and Parmesan if desired. Enjoy!
