Creamy, savory, and packed with sun-dried tomatoes and spinach, this Tuscan chicken is a restaurant-quality meal made at home. Tender chicken tenders are seared, then simmered in a rich Parmesan cream sauce with garlic, onions, and red pepper flakes. Serve over mashed potatoes or pasta for the ultimate comfort food.

Directions

  1. In a large bowl, place 1½ lbs chicken tenders. Add avocado oil, adobo all-purpose seasoning, garlic powder, Italian seasoning, onion powder, smoked paprika, salt, and black pepper. Toss to coat the chicken evenly in the seasonings.
  2. Use the oil from a jar of sun-ripened dried tomatoes to coat the bottom of a large skillet. Heat over medium-high heat.
  3. Add the seasoned chicken tenders to the pan and cook until about 75% cooked through (golden on both sides). Remove the chicken from the pan and set aside.
  4. In the same pan, add diced onion, minced garlic, and halved sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Pour in heavy cream and add red pepper flakes, Italian seasoning, garlic powder, and a large pinch of salt. Stir to combine.
  6. Add grated Parmesan cheese and whisk until the sauce is smooth and creamy.
  7. Add fresh spinach to the pan and stir until wilted.
  8. Return the partially cooked chicken to the pan. Cover and cook on low to medium heat for 7-10 minutes, until the chicken is fully cooked and the sauce has thickened.
  9. Sprinkle with fresh parsley before serving.
  10. Serve over mashed potatoes, pasta, or rice. Enjoy!
