Directions

  1. Sear the Salmon: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season the 2 salmon fillets with salt and pepper. Sear for 4-5 minutes per side until golden and cooked through. Remove from the pan and set aside.
  2. Sauté Vegetables: In the same pan, melt 2 tbsp butter. Add the sliced mushrooms and cook for 3-4 minutes until softened. Add the minced garlic and fresh spinach, cooking just until the spinach wilts.
  3. Make the Cream Sauce: Pour in the ¼ cup chicken broth to deglaze the pan, scraping up any browned bits. Then add the ½ cup heavy cream, 1 tsp Dijon mustard, and 1 tsp fresh thyme. Stir well and let the sauce simmer for 2-3 minutes until it thickens slightly.
  4. Combine and Serve: Return the seared salmon fillets to the pan, spooning the creamy sauce, spinach, and mushrooms over the top. Serve immediately with mashed potatoes, rice, or a light salad.
