A luxurious yet easy one-pan dinner. Tender salmon fillets are seared and served in a rich, creamy garlic butter sauce with sautéed spinach and mushrooms. It’s an elegant, restaurant-quality meal made in under 30 minutes.
Ingredients:
- 2 6 oz salmon filets
- 1 tbsp olive oil
- 2 tbsp butter
- 2 cups fresh spinach
- 1 cup mushrooms (sliced cremini or white)
- 3 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1 tsp Dijon mustard
- 1 tsp fresh thyme leaves (or 1/2 dried thyme)
- 1 tsp salt (to taste)
- 1 tsp black pepper (to taste)

Directions
- Sear the Salmon: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season the 2 salmon fillets with salt and pepper. Sear for 4-5 minutes per side until golden and cooked through. Remove from the pan and set aside.
- Sauté Vegetables: In the same pan, melt 2 tbsp butter. Add the sliced mushrooms and cook for 3-4 minutes until softened. Add the minced garlic and fresh spinach, cooking just until the spinach wilts.
- Make the Cream Sauce: Pour in the ¼ cup chicken broth to deglaze the pan, scraping up any browned bits. Then add the ½ cup heavy cream, 1 tsp Dijon mustard, and 1 tsp fresh thyme. Stir well and let the sauce simmer for 2-3 minutes until it thickens slightly.
- Combine and Serve: Return the seared salmon fillets to the pan, spooning the creamy sauce, spinach, and mushrooms over the top. Serve immediately with mashed potatoes, rice, or a light salad.
