Directions

  1. Prepare the noodles: Bring a large pot of water to a boil. Add your choice of noodles (such as lo mein or chow mein) and cook according to the package instructions until al dente. Drain and set aside.
  2. Marinate the chicken: In a bowl, combine sliced chicken with soy sauce, cornstarch, and a pinch of salt. Let it marinate for about 15 minutes to tenderize and infuse flavor.
  3. Cook the chicken: Heat a wok or large skillet over medium-high heat. Add a tablespoon of oil and sauté the marinated chicken until it’s cooked through and lightly browned. Remove the chicken from the pan and set aside.
  4. Sauté the vegetables: In the same pan, add another tablespoon of oil. Add sliced onions, minced garlic, and julienned carrots. Stir-fry for 2–3 minutes until the vegetables are tender-crisp.
  5. Combine chicken and noodles: Return the cooked chicken to the pan. Add the cooked noodles and toss everything together to combine.
  6. Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and a splash of water. Pour this sauce over the chicken and noodles, tossing to coat evenly.
  7. Finish and serve: Stir-fry the mixture for an additional 2–3 minutes, allowing the sauce to thicken slightly and the noodles to absorb the flavors. Serve hot, garnished with chopped green onions or sesame seeds if desired.
