Chicken Katsu Curry
Simple Homemade Chicken Katsu Curry 🍛
Crispy chicken katsu, cozy curry sauce, and fluffy rice — the ultimate comfort meal from your own kitchen. This version is easy, fast, and oh-so-satisfying. Perfect for a weeknight or whenever you need that cozy Japanese-style hug on a plate.
Ingredients:
- 2 boneless chicken breasts
- Salt and pepper, to taste
- 0.5 cup flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Oil for shallow frying
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 tbsp grated ginger
- 1 tbsp curry powder
- 1 tbsp plain flour
- 1.5 cups chicken or veggie stock
- 1 tbsp soy sauce
👨🍳 Method
- Make the Sauce: In a saucepan, sauté onion in oil until soft. Add garlic, ginger, and curry powder. Stir in flour and cook for 1 min. Gradually whisk in stock, soy sauce, and honey. Simmer until thickened.
- Prep the Chicken: Flatten chicken slightly. Season with salt and pepper. Coat in flour, dip in egg, and cover in panko.
- Fry: Shallow fry in oil for 3–4 mins per side or until golden and cooked through. Drain on paper towel.
- Slice & Serve: Slice chicken, serve over steamed rice, and pour curry sauce on top. Optional garnish: chopped scallions or sesame seeds.
