- white rice (cooked)
- jerk chicken
- mushrooms
- peppers
- onion
- garlic
- spinach
- black beans
- kidney beans
- sharp cheddar cheese
- crushed fire-roasted tomatoes

Directions
- Prepare the WHITE RICE and JERK CHICKEN, if they are not already cooked.
- Prepare the MUSHROOMS, PEPPERS, ONION, GARLIC, and SPINACH.
- In a large casserole dish, combine the cooked WHITE RICE, JERK CHICKEN, mushrooms, peppers, onion, garlic, spinach, BLACK BEANS, KIDNEY BEANS, and CRUSHED FIRE-ROASTED TOMATOES.
- Mix everything together so the rice, chicken, beans, vegetables, and tomatoes are evenly distributed throughout the casserole.
- Add plenty of SHARP CHEDDAR CHEESE, keeping with Tessa’s formula that the cheese is an essential part of the dish.
