Ingredients:
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 0.5 cup buttermilk
- 1 cup cornstarch (or a mix of cornstarch and flour)
- 0.5 tsp garlic powder
- 0.5 tsp salt
- Vegetable oil (for frying)
- 0.25 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (or to taste)
- 1 tbsp honey (optional, for extra sweetness)
Instructions
- Marinate the chicken: In a bowl, combine chicken pieces with buttermilk. Let sit for at least 20 minutes (or overnight for extra tenderness).
- Prep the coating: In another bowl, mix cornstarch, garlic powder, and salt.
- Coat and fry: Dredge chicken pieces in the dry mix and fry in hot oil (350°F) until golden and crispy—about 3–4 minutes per side. Drain on paper towels.
- Make the sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey (if using).
- Toss & serve: Coat the crispy chicken in the bang bang sauce or drizzle on top. Garnish with green onions or sesame seeds, and serve hot!
