A creamy, dreamy high-protein banana pudding mousse that tastes just like the classic dessert! Made with cottage cheese, ripe bananas, and vanilla protein powder, this healthy twist on banana pudding is layered with crushed Nilla wafers and topped with coconut whipped cream and fresh banana slices. The perfect make-ahead treat!
Ingredients:
- 16 oz full fat cottage cheese
- 1 banana (ripe)
- 1 tbsp pure maple syrup
- 6 tbsp vanilla protein powder
- 1 tsp vanilla extract
For Garnish
- homemade Nilla Wafers
- coconut whipped cream
- banana coins

Directions
- In a blender, combine full fat cottage cheese, ripe banana, maple syrup, vanilla protein powder, and vanilla extract. Blend until completely smooth and creamy.
- Crush homemade Nilla wafers into small crumbs.
- Layer the crushed wafers into the bottom of individual jars or cups.
- Pour the mousse mixture over the wafer layer, dividing evenly among the jars.
- Refrigerate for at least 3 hours (or overnight) for a thicker, pudding-like texture.
- When ready to serve, top with banana coins, coconut whipped cream, and additional crushed wafers. Enjoy!
