Snack Box 1 – Chicken Salad with Pickles

Chicken Salad with Pickles

Creamy, tangy chicken salad with crunchy pickles and celery — perfect with pretzels or crackers.

Chicken Salad Recipe

1 rotisserie chicken, shredded or chopped
¾ cup mayonnaise
1 whole jar dill pickles, chopped
Celery, chopped (quite a bit)
Dried dill, onion powder, garlic powder, black pepper, salt (to taste)
½ cup pickle juice

Directions (Chicken Salad)

  1. Shred or chop the rotisserie chicken into bite‑sized pieces.
  2. Add mayonnaise, chopped pickles, chopped celery, and pickle juice.
  3. Season with dried dill, onion powder, garlic powder, black pepper, and a little salt.
  4. Stir until everything is well combined.
  5. Store in an airtight container in the refrigerator.

Assemble the Snack Box

½ cup chicken salad (from recipe above)
1 hard-boiled egg, peeled
2‑3 whole dill pickles
¼ cup pretzels
  1. Add chicken salad to the main compartment of your snack box.
  2. Place the hard-boiled egg in a separate compartment.
  3. Add whole pickles to another compartment.
  4. Fill the remaining compartment with pretzels.
  5. Close the box and refrigerate until ready to pack in a lunchbox.

Assemble the Snack Box

½ cup baby carrots
2 tbsp ranch dressing (in a small container)
4‑6 cheese squares (cheddar or colby jack)
6‑8 pepperoni slices
8‑10 mini club crackers
  1. Wash and pat dry baby carrots.
  2. Add a small container of ranch dressing to the snack box for dipping.
  3. Cut cheese into small squares or use pre‑sliced cheese.
  4. Layer pepperoni slices, cheese squares, and mini club crackers in separate compartments.
  5. Add baby carrots to the remaining compartment.
  6. Close the box and refrigerate until ready to serve.

Banana Bread Recipe

3‑4 bananas, mashed
⅓ cup melted butter
1 egg
Pinch of salt
1 tsp baking soda
1 tsp vanilla extract
½‑1 cup sugar (to taste)
1½ cups all‑purpose flour

Directions (Banana Bread)

  1. Preheat oven to 350°F (175°C). Grease a mini loaf pan or regular loaf pan.
  2. In a large bowl, mash the bananas with a fork.
  3. Stir in melted butter, egg, salt, baking soda, vanilla, and sugar until combined.
  4. Add flour and mix just until incorporated (do not overmix).
  5. Pour batter into prepared pan(s).
  6. Bake for 20‑25 minutes for mini loaves, or 50‑60 minutes for a standard loaf, until a toothpick inserted comes out clean.
  7. Cool completely before slicing and adding to snack boxes.

3 scoops vanilla Greek yogurt
¼ cup fresh strawberries, sliced
¼ cup fresh blueberries
2 tbsp chocolate chip granola
1 mini loaf banana bread (from recipe above)
  1. Scoop vanilla Greek yogurt into a small container or compartment.
  2. Wash, dry, and slice strawberries.
  3. Add fresh blueberries and sliced strawberries to the box.
  4. Sprinkle chocolate chip granola over the yogurt or keep in a separate bag.
  5. Add a mini loaf of homemade banana bread to the largest compartment.
  6. Close the box and refrigerate until ready to pack.
