Step 1: Roast the Potatoes
Prep the Potatoes
- Preheat your oven to 425°F.
- Wash the potatoes thoroughly.
- Cut into 1-inch cubes.
Place the potatoes in a large mixing bowl.
Season
Add:
- Olive oil
- Salt
- Pepper
- Garlic powder
Toss until every piece is evenly coated.
Roast
Spread the potatoes onto a baking sheet in a single layer.
Bake for:
35–40 minutes
Stir halfway through cooking.
✅ The potatoes are done when they’re crispy on the outside and tender on the inside.
Step 2: Prepare the Steak
Cut & Season
While the potatoes roast:
- Pat the steak dry with paper towels.
- Cut into bite-sized pieces.
- Place in a mixing bowl.
Add:
- Paprika
- Onion powder
- Garlic powder
- Salt
- Pepper
Toss until evenly coated.
Step 3: Make the Garlic Sauce
Mix the Sauce
In a small bowl, combine:
- Greek yogurt
- Melted butter
- Garlic
- Salt
- Pepper
Mix thoroughly until smooth.
Place in the refrigerator while the remaining ingredients cook.
💡 Chilling allows the flavors to develop and creates a thicker, creamier sauce.
Step 4: Cook the Steak
Sear the Steak
Heat a large skillet over medium-high heat.
Add:
- 1 tablespoon olive oil
Once hot, add the steak in a single layer.
⚠️ Do not overcrowd the pan.
Cook:
- 2–3 minutes on the first side
- Flip
- 2–3 minutes on the second side
This will produce a medium doneness for most steak bites.
If necessary, cook in batches.
Remove from heat and set aside.
Step 5: Build the Loaded Potatoes
Assemble the Bowls
Divide the roasted potatoes among 4 serving bowls.
Top each bowl with:
- Steak bites
- Shredded cheddar cheese
Allow the heat from the potatoes and steak to gently melt the cheese.
Step 6: Finish the Bowls
Add the Toppings
Drizzle each bowl generously with the garlic sauce.
Finish with:
- Sliced green onions
Serve immediately.

Leftover Tips
Storage
Store the components separately whenever possible.

Reheating
For best results:
- Reheat the potatoes first.
- Warm the steak separately.
- Add the garlic sauce after reheating.
✅ This prevents the sauce from separating and keeps the potatoes crisp.
