Cilantro Lime Chicken Crispy with Honey

A complete, high-protein meal featuring crispy air-fried chicken coated in corn flakes, drizzled with a vibrant cilantro-lime sauce, and served with a crunchy cucumber salad and ciabatta bread. Flavorful, satisfying, and macro-conscious.
Ingredients:
Crispy Chicken
- 1 lb boneless, skinless chicken breast (sliced or pounded to even thickness)
- 1/2 cup all-purpose flour
- 1 large egg (beaten)
- 2 cups corn flakes (finely crushed)
- 1 tsp salt
- 1/2 tsp black pepper
Cilantro Lime Sauce
- 1 tbsp avocado oil (or olive oil)
- 1/2 cup fresh lime juice
- 1 tbsp honey
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cloves garlic (finely chopped)
- 1/2 cup water
- 1/2 cup fresh cilantro (finely chopped)
Cucumber Salad
- 1 medium cucumber (thinly sliced)
- 1 cup shredded cabbage (red or green)
- 1 jalapeu00f1o (thinly sliced (seeds removed for less heat))
- 1 tbsp honey
- 2 tbsp pickle juice
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 zest of lime

Directions
- Prepare the Crispy Chicken: Dredge chicken breast pieces first in flour, then in beaten egg, and finally coat thoroughly in crushed corn flakes.
- Cook the Chicken: Air fry the coated chicken at 385°F (196°C) for 18 to 20 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the coating is golden and crispy.
- Make the Cilantro Lime Sauce: While the chicken cooks, heat 1 tbsp avocado oil in a small pan over medium heat. Add 1/2 cup lime juice, 1 tbsp honey, 1 tsp cumin, salt, pepper, and 3 chopped garlic cloves. Stir in 1/2 cup water and let the mixture simmer to reduce slightly.
- Remove the sauce from heat and stir in 1/2 cup of chopped fresh cilantro. Set aside.
- Prepare the Cucumber Salad: Thinly slice cucumber, cabbage, and jalapeño and place in a bowl. Add honey, pickle juice, salt, pepper, onion powder, garlic powder, and lime zest to taste. Cover and shake the bowl vigorously to combine all ingredients.
- Assemble the Meal: Slice the ciabatta bread. Plate the crispy chicken, drizzle generously with the warm cilantro-lime sauce, and serve with the cucumber salad and bread on the side. Enjoy immediately.
