Directions

  1. Prepare the Crispy Chicken: Dredge chicken breast pieces first in flour, then in beaten egg, and finally coat thoroughly in crushed corn flakes.
  2. Cook the Chicken: Air fry the coated chicken at 385°F (196°C) for 18 to 20 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the coating is golden and crispy.
  3. Make the Cilantro Lime Sauce: While the chicken cooks, heat 1 tbsp avocado oil in a small pan over medium heat. Add 1/2 cup lime juice, 1 tbsp honey, 1 tsp cumin, salt, pepper, and 3 chopped garlic cloves. Stir in 1/2 cup water and let the mixture simmer to reduce slightly.
  4. Remove the sauce from heat and stir in 1/2 cup of chopped fresh cilantro. Set aside.
  5. Prepare the Cucumber Salad: Thinly slice cucumber, cabbage, and jalapeño and place in a bowl. Add honey, pickle juice, salt, pepper, onion powder, garlic powder, and lime zest to taste. Cover and shake the bowl vigorously to combine all ingredients.
  6. Assemble the Meal: Slice the ciabatta bread. Plate the crispy chicken, drizzle generously with the warm cilantro-lime sauce, and serve with the cucumber salad and bread on the side. Enjoy immediately.
