The ultimate comfort food casserole that took the internet by storm! A buttery, biscuit-topped chicken and vegetable bake with a creamy, savory sauce that bubbles up through the crust. It’s impossibly easy to make and tastes like a warm hug in a bowl.
Ingredients:
- 1 stick butter
- 1 rotisserie chicken (meat removed and shredded)
- 1 10 oz bag frozen mixed vegetables
- garlic powder (to taste)
- onion powder (to taste)
- black pepper (to taste)
- 8 oz grated cheddar cheese
- 1 packet cheddar bay biscuit mix (with seasoning packet)
- 2 cups milk
- 1 can cream of mushroom soup
- 2 cups chicken broth
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Preheat your oven to 350°F (175°C).
- Place 1 stick of butter in a 9×13 baking dish. Transfer the dish to the oven to melt the butter while it preheats.
- Once the butter is melted, remove the dish from the oven. Pick the meat off a rotisserie chicken and scatter the shredded chicken evenly over the melted butter.
- Pour a 10 oz bag of frozen mixed vegetables over the chicken, spreading them into an even layer.
- Season the vegetables with garlic powder, onion powder, and black pepper to taste.
- Sprinkle 8 oz of grated cheddar cheese evenly over the top of the vegetables.
- In a separate bowl, mix together 1 packet of cheddar bay biscuit mix (along with the included seasoning packet) and 2 cups of milk until just combined. Pour this biscuit batter gently over the cheese layer. Do not mix it in.
- In another bowl, whisk together 1 can of cream of mushroom soup and 2 cups of chicken broth until smooth. Pour this soup mixture gently over the biscuit layer. Again, do not mix it.
- Transfer the baking dish to the oven. Bake for about 1 hour, or until the crust is golden brown and the casserole is cooked through and bubbly.
- Remove from the oven and let it rest for 20 minutes before serving to allow the casserole to set.
- Scoop out generous portions, serve hot, and enjoy!
