The ultimate comfort food casserole that took the internet by storm! A buttery, biscuit-topped chicken and vegetable bake with a creamy, savory sauce that bubbles up through the crust. It’s impossibly easy to make and tastes like a warm hug in a bowl.

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Place 1 stick of butter in a 9×13 baking dish. Transfer the dish to the oven to melt the butter while it preheats.
  3. Once the butter is melted, remove the dish from the oven. Pick the meat off a rotisserie chicken and scatter the shredded chicken evenly over the melted butter.
  4. Pour a 10 oz bag of frozen mixed vegetables over the chicken, spreading them into an even layer.
  5. Season the vegetables with garlic powder, onion powder, and black pepper to taste.
  6. Sprinkle 8 oz of grated cheddar cheese evenly over the top of the vegetables.
  7. In a separate bowl, mix together 1 packet of cheddar bay biscuit mix (along with the included seasoning packet) and 2 cups of milk until just combined. Pour this biscuit batter gently over the cheese layer. Do not mix it in.
  8. In another bowl, whisk together 1 can of cream of mushroom soup and 2 cups of chicken broth until smooth. Pour this soup mixture gently over the biscuit layer. Again, do not mix it.
  9. Transfer the baking dish to the oven. Bake for about 1 hour, or until the crust is golden brown and the casserole is cooked through and bubbly.
  10. Remove from the oven and let it rest for 20 minutes before serving to allow the casserole to set.
  11. Scoop out generous portions, serve hot, and enjoy!
