This cozy, comforting Vietnamese Chicken Pho is the perfect bowl of warmth. It’s fragrant, nourishing, and surprisingly easy to make at home, packed with herbs, tender chicken, and silky rice noodles in an aromatic broth that tastes like it’s been simmering all day.

Ingredients:

Optional toppings: cilantro, green onions, bean sprouts, lemon, chili

Directions

  1. Char aromatics: Char onion and ginger in a dry pan or over flame.
  2. Toast spices: Toast spices in your pot until fragrant.
  3. Sear chicken: Add a bit of oil and sear chicken thigh until golden.
  4. Simmer broth: Add broth, water, soup base, fish sauce, charred aromatics, spices, and chicken. Simmer ~20 min.
  5. Debone chicken: Remove chicken, discard bone, shred meat.
  6. Strain broth: Strain out spices and solids for a smooth base.
  7. Cook noodles: Prepare noodles and portion into a serving bowl.
  8. Assemble: Add chicken, pour broth, and garnish with herbs, sprouts, lemon, or chili oil
