This Turkey Sausage & Sweet Potato Breakfast Casserole combines savory turkey sausage, roasted sweet potatoes, eggs, peppers, onions, and garlic into a hearty make-ahead breakfast that’s ideal for meal prep and busy mornings.

Directions

  1. Preheat the oven to 425°F.
  2. Toss the sweet potatoes with olive oil, salt, and pepper. Roast for 15 minutes.
  3. Cook the turkey sausage in a skillet until browned. Remove and set aside.
  4. Cook the onion and bell pepper in the skillet until softened. Add the garlic and cook briefly.
  5. Reduce the oven temperature to 375°F.
  6. Spray a 9×13 baking dish and add the roasted sweet potatoes, cooked turkey sausage, peppers, onions, and garlic.
  7. Whisk together the eggs, milk, salt, black pepper, chipotle powder, and chili flakes.
  8. Pour the egg mixture into the baking dish and stir gently to combine.
  9. Cover with foil and bake for 15 minutes.
  10. Remove the foil and continue baking for 10 to 15 minutes until set.
  11. Allow the casserole to rest for several minutes before serving.
