Spinach Banchan

A simple and refreshing Korean side dish featuring blanched spinach seasoned with nutty sesame, perfect for complementing any main course or enjoying with a bowl of rice.
Ingredients:
- 1 5-6oz bag fresh spinach
- 1/4 tsp salt
- 1 tbsp sesame seeds
- 1 tsp sesame oil
- 1 tsp perilla oil (optional)
- 1 cup ice
Directions
- Bring a pot of water to a boil and blanch the spinach for 10 seconds.
- Immediately transfer the spinach to a bowl of iced water to stop the cooking process.
- Drain the spinach and firmly wring out all excess water.
- Transfer the spinach to a bowl and season with salt, sesame seeds, sesame oil, and perilla oil (if using). Mix well to combine.
- Serve as a side dish or with a bowl of rice.
