Smoky Chicken Skewers with Garlic Yogurt Marinade + Tangy Herb Oil

Incredibly tender and flavorful chicken skewers with a smoky, garlicky yogurt marinade and a bright, tangy herb oil. Perfect for grilling season and guaranteed to be a crowd-pleaser!
Ingredients:
- 2 lbs boneless, skinless chicken thighs (cut into skewer-sized chinks)
- 2/3 cup Greek yogurt (full-fat preferred)
- 1 lemon (juiced)
- 4 cloves garlic (grated or finely minced)
- 1.5 tsp ground cumin
- 1.5 tsp smoked paprika
- 1.5 tsp dried oregano
- 1.5 tsp Aleppo pepper
- 1.5 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 tsp honey
- 2 tbsp extra virgin olive oil
- 1 cup Tangy Herb Oil
Directions
- In a large bowl, whisk together Greek yogurt, lemon zest + juice, garlic, cumin, smoked paprika, oregano, Aleppo pepper, salt, pepper, honey, and olive oil until smooth and well blended.
- Add chicken and toss until fully coated. Cover and refrigerate for at least 1 hour, but honestly, the longer it marinades the better it will be!
- Thread chicken onto skewers.
- Heat grill or grill pan over medium-high. Cook skewers 4–5 minutes per side, until charred and cooked through (internal temp: 165°F).
- Drizzle with tangy herb oil while the skewers are still hot to make it next level!
