Directions

  1. Preheat your oven to 350°F (175°C). Line a small baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together melted unsalted butter, packed light brown sugar, and granulated sugar until smooth and combined.
  3. Stir in egg yolk and vanilla extract until fully incorporated and smooth.
  4. Add all-purpose flour, baking powder, cornstarch, and salt. Use a spatula or wooden spoon to gently fold the ingredients until a dough forms. The dough will be slightly thick.
  5. Fold in semi-sweet chocolate chips, saving a few to press on top.
  6. Optional variations: Swap chocolate chips for M&Ms, crushed Oreos, crushed Biscoff cookies with white chocolate chips, or use cake batter extract with sprinkles for birthday cake cookies.
  7. Divide the dough into two large balls and place them on the prepared baking sheet. Flatten them slightly with your fingers.
  8. Place the tray in the freezer for 10 minutes to prevent spreading.
  9. Bake for 10-12 minutes, or until the edges are golden and set. The centers might look slightly underdone—this is perfect, as they will continue to set as they cool.
  10. Sprinkle with flaky sea salt as soon as they come out of the oven. Let the cookies cool on the baking sheet for 5 minutes before enjoying.
