Sausage & Harissa Pasta
A weeknight hero with spice, comfort, and deep flavor in every bite. Harissa paste brings warmth, the sausage adds heartiness, and pasta pulls it all together in this gorgeously satisfying dish. Quick, easy, and endlessly cozy.
Ingredients
- 2–3 quality sausages (pork or veggie), casings removed
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tbsp rose harissa paste
- 200g (about 7 oz) pasta (penne, rigatoni, or your fave shape)
- 100ml pasta water (reserved)
- 2 tbsp crème fraîche or Greek yogurt (for creaminess)
- Olive oil, salt, and black pepper to taste
- Fresh parsley or basil for topping
- Optional: parmesan or lemon zest to finish
Instructions
- Bring a pot of salted water to a boil and cook pasta until al dente. Reserve some cooking water before draining.
- While pasta cooks, heat olive oil in a large pan over medium heat. Add sausage and cook until browned and crumbly.
- Add the diced onion and cook for 3–4 minutes until soft. Stir in the garlic and cook 1 minute more.
- Mix in the harissa paste and stir until fragrant and fully combined.
- Add drained pasta to the pan, along with the reserved water. Stir through crème fraîche or yogurt.
- Taste and season with salt and pepper. Let everything simmer for a minute to coat the pasta in the sauce.
- Serve hot, topped with herbs and a sprinkle of cheese or lemon zest if using.
