Salmon Avocado Salad

A healthy and satisfying salad featuring perfectly air-fried salmon and creamy avocado. It’s a quick, protein-packed meal that’s both delicious and nutritious.
Ingredients:
Salmon
- 1 lb salmon
- 1 tbsp garlic powder
- 1 tsp smoked paprika
- 1 tsp Trader Joe's 21 Seasoning Salute
- 1 tbsp onion powder
- 1 tsp black garlic
- 1 tsp black pepper
- 1 tsp arrowroot powder
Salad
- 1 cucumber (quartered)
- 1 cup cherry tomatoes (halved)
- 15 oz can corn (drained)
- 15 oz can black beans (rinsed)
- 1 9 oz bag edamame
- 3 green onions (chopped)
- 1 handful cilantro
Dressing
- 1 cup fresh lemon juice
- 2 tbsp lemon zest
- 1 cup firmly packed fresh basil leaves
- 1 1/3 cup extra virgin olive oil
- 4 tbsp white wine vinegar
- 3 cloves garlic
- 2 tbsp Dijon mustard
- 4 tbsp raw honey
- 1 tsp ground black pepper
- 1 tsp crushed red pepper flakes
- 1 tbsp parmesan cheese
Directions
- Season your salmon liberally, then add 1 tablespoon arrowroot powder. Air fry at 400°F for 8-10 minutes.
- Add all your salad ingredients to a bowl and toss.
- Add all dressing ingredients into a bowl and blend.
- When you are ready to eat, top the salad with the cooked salmon, avocado, and dressing.
